If your potato salads – like mine – usually consist of potatoes dressed in mayonnaise with (maybe) a sprinkle of chopped chives, you really must try this potato salad. The potatoes are dressed with this vinaigrette dressing whilst they are still warm and can soak up the flavour. Then they are tossed with chopped mint, parsley, chives and spring onions.
