The Delia Smith Project: Chilled Spanish Gazpacho

I’ve never made Gazpacho before and only ever eaten it myself twice, so I was keen to try this chilled soup. Especially before the summer waves goodbye. It’s so easy to make as all the ingredients are simply blended together. It’s typically served with a garnish of capsicum, cucumber, spring onions and hard-boiled egg, but I was pressed for time (everyone needed to be fed) so I simply added a couple of ice cubes to each bowl.
