Time for another soup? When it was a bit chilly a few weeks back, I bought some turnips to make this soup. Then they sat in the fridge for a while, destined to stay there until they turned green, because seriously, I am over winter and winter vegetables!
However, I hate wasting food and this is a simple soup recipe, based on the Welsh dish Punchnep of turnips, potatoes and cream. I adapted the recipe to be dairy-free, substituting the milk for coconut milk. (It was full-fat coconut milk, so I watered it down a bit.) It’s then seasoned with nutmeg, salt and pepper. And served with a swirl of double cream. I’m laying off the dairy for a bit, but that would be really nice!
