So… whilst looking for a recipe to cook on a Wednesday night, this one caught my eye as Delia says, “this is an excellent recipe and a very easy one.” Just what I need on a weekday evening!

The only change I made to this recipe was to substitute fine almond meal for the dried white breadcrumbs to make it gluten-free. The ‘breadcrumbs’ are made from sage, almond meal, salt and pepper. It’s a simple combination and smells amazing when the crumbed pork chops meet the melted oil and butter in the pan.

Then… you brown the chops on both sides, before lowering the heat to cook them gently and slowly for about 25-30 minutes. Giving you plenty of time to cook the veggies, clear LEGO and various toys off the floor and coax two Munchkins inside from the playground. And it’s served with fried onion and apple rings. Pork chops + Apple + Onion = 🙂
