I messed up my menu plan a bit this week and made something today that is almost identical to the Spanish Tortilla yesterday. Never mind, the Munchkins didn’t even mention it, since it contains potatoes and bacon – usually a winning combination. The only real difference is the cheese and you can never go wrong in this house with some cheese.

Apparently the difference between a frittata and an omelette is that the ingredients in a frittata are all mixed in together, while an omelette is an egg mixture that is folded around a filling. Which makes this more of a frittata. Never mind, makes a good breakfast, lunch or dinner!
